just thought we should share a recipe from one of the weddings at the weekend as i was asked by so many people how i made it! Thankyou to Laura and Oli for choosing hogget for the wedding breakfast, i'd actually never tried it before and it was so delicious! Also thankyou to Chapmans butcher for supplying such great quality meat :-)
So here it is, slow roasted hogget in sumac and mint with watercress, almond and mint pesto.
prepare this the day before for best results!! Oven 220 to start with...

Boned and rolled hogget, (can use lamb leg instead but hogget is amazing!)
sumac, dried mint, garlic, seasoning, oil.
in a pestle and mortar bash a load of garlic cloves with dried mint, sumac and a bit of oil. Season the hogget well and make little slits all over it, rub the marinade all over, be generous with it, push some garlic cloves into the little slits in the meat. When its covered in the rub completely put in the oven for 20 minutes uncovered. Turn the oven down to 150c and take the hogget out, cover with foil and return to the oven to slow roast for hours. Take it out every so often to baste in the fat and juce that comes out of it during cooking. Once its cooked and totally soft and lovely remove from the oven and wrap in clingfilm immediately. Put in the fridge to cool overnight. Save the juices from the tin and leave to cool. Next day remove hogget from cling film and slice into nice fat slices, skim the fat from the juices and put it back into a clean oven tin with the slices of meat, cover and turn oven on low. Prep all your other ingredients to go with then reheat the meat for about 30 minutes in the oven. Meanwhile make the pesto.... fresh watercress, garlic, cheese... i used Davidstow cheddar but any will do, whole almonds, good oil, salt and pepper, fresh mint. Put all ingredients in a good blender and blitz until its as smooth as you like, i like it a bit coarse. take the hogget out the oven and serve with the pesto drizzled over the top and a handful of fresh watercress. Beauty! x
