Coconut covered carrot cake energy balls, too yummy! This was one of those “I’m not really sure what I’m making” recipes so I kind of just added things as I went along! Pleased with what came together at the end 😁. 2 carrots grated, handful of raisins, good handful of dates, about 2 tbsp of nut butter, handful walnuts, mixed spice and cinnamon... I used quite a lot as I love the flavour, few handfuls of desiccated coconut and more to roll them in and a good pinch of sea salt. Just blitz everything up in a processor until combined then with wet hands roll into balls then finish in coconut, leave to firm up in the fridge for about 30 minutes.
